The idea of sort fields is to impose a sort order (or index) on the items in the stock list in addition to the standard fields in the table. While Nomen, type and class are important identifiers they cannot normally provide both good descriptions and good sorting keys at the same time. The sort fields allow you to provide such an order.
Certain classes have predefined sets of sort keys, each of which has a 4-character value. The total string is used to order items within the same class. For example it could group casing items by size, then weight then thread and similar.
